But once it hits the fermenter we blend up some delicious magic. With the addition of watermelon and Azzaca hops our BW transforms into a juicy sweet melon candy ale. Light body, low alcohol and effervescent 'One in a melon' is a crusher.
A note about sours: A kettle and traditional sour have very different characteristics. A kettle sour is done in the kettle by adding bacteria like lactobacillus to the wort. This gives the sour it's typical characteristic: tartness. A traditional sour, sometimes called a barrel-aged sour, is soured in wood barrels with microbes. The microbes can bring a variety of funky characteristics to the beer. And traditional sours can take significantly more time to reach their funk. Andy chooses a kettle sour for the Nita brews as the simplicity of the tart characteristic allows Nita to add complimentary flavours ... like this watermelon flavoured beer!.
